Classification and Processing Principles of Sausage Products

There exists a wide variety of sausage products with diverse processing techniques, and no unified classification standard has been established worldwide. For instance, German sausages are mainly divided into raw sausages, cooked-smoked sausages and fully cooked sausages. For many years, China’s meat processing industry has adopted a popular classification system that distinguishes Chinese sausages from Western-style sausages. Traditional Chinese sausages represented by Cantonese cured sausages are defined as Chinese sausages, while those introduced to China from foreign countries in modern times are referred to as Western-style sausages.
Sausages can be categorized by multiple criteria: by raw materials, they are classified as livestock meat sausages and poultry meat sausages; by raw or cooked status, raw sausages and cooked sausages; by flavor, southern-style sausages and northern-style sausages; by regional characteristics, Beijing-style, Suzhou-style, Cantonese-style, Sichuan-style sausages, etc.; by fermentation status, fermented sausages and non-fermented sausages; by smoking treatment, smoked sausages and non-smoked sausages; by meat cutting fineness, ground meat sausages and emulsified sausages. In the United States and Japan, sausages are sorted into fresh sausages, smoked sausages, cooked sausages, dry sausages and semi-dry sausages. In this document, sausage products are divided into Chinese sausages and other Western-style sausages. Based on processing technology, sausages fall into the following four categories:
I. Fresh Sausages (Raw Sausages)
Fresh sausages mainly use fresh pork as raw material. Fresh meat is ground, mixed with seasonings and spices, then stuffed into casings without curing with nitrates or nitrites. The products undergo no cooking or curing and should be stored at 0–4 °C before consumption, with a shelf life of approximately 2 to 4 days. They require thorough cooking before eating, hence the name fresh sausages. Typical products include Thüringer pork sausage, Kielbasa and Bockwurst.
Apart from meat, these sausages may incorporate auxiliary ingredients such as pork head meat, pork offal mixed with potatoes, starch and bread crumbs; beef blended with eggs, bread crumbs or biscuit powder; mixed sausages made of pork and beef with eggs and flour; tomato sausages containing pork, beef, tomatoes and cracker crumbs; and sausages composed of pork, beef, fat and rice flour. High moisture content and lack of thermal sterilization lead to soft textures and poor storage stability, so these products cannot be preserved long-term. Consumers must reprocess them thoroughly before eating, resulting in low market availability within China.
II. Cooked Sausages
Cooked sausages are manufactured by grinding cured or uncured meat chunks, blending with seasonings, stuffing into casings, followed by boiling and optional light smoking. This is the most common category and accounts for the largest share of sausage output in the industry. In Europe, livestock and poultry livers, lungs, tongues and head trimmings are frequently used as raw materials. Due to high microbial contamination risks of these ingredients, they must be pre-cooked, mixed with seasonings, stuffed into casings and further smoked and boiled. Representative products include liver sausage, blood sausage and tongue sausage. Some varieties contain abundant collagen, delivering good elasticity, firm texture and chewiness, while others feature soft, spreadable textures ideal for bread toppings. They are widely consumed as breakfast sausages across Europe and America.
III. Fermented Sausages
Fermented sausages constitute the largest output segment among fermented meat products and serve as the representative of this product category. Ground pork or beef is used as the primary raw material, blended with animal fat, salt, sugar, spices and optional microbial starter cultures. The mixture is stuffed into casings and subjected to microbial fermentation plus ripening-drying (or without ripening-drying) to form meat products with stable microbial profiles and characteristic fermented aromas.
Fermented sausages cover a broad range. Based on meat particle size, they are split into coarse-ground and fine-ground varieties. By moisture loss during secondary processing, they are categorized into dry sausages (moisture loss over 30%), semi-dry sausages (10%–30% moisture loss) and slightly dried sausages (moisture loss below 10%). Though not entirely scientifically rigorous, this classification is widely accepted by industry practitioners and consumers. Classic examples include Salami, Dry Elch sausage and Schinkenwurst. These products feature a low pH value of 4.8–5.5, a distinctive tangy flavor, compact texture, excellent slicing performance, moderate elasticity and extended shelf life.
IV. Smoked Sausages
Smoked sausages adopt various livestock and poultry meats as raw materials. After chopping, curing and grinding, meat is mixed with seasonings and spices, stuffed into casings and processed via smoking with optional heating (unheated variants are raw smoked sausages). Currently, smoked sausages register the highest production volume among all meat plant sausage varieties. Flagship products include Frankfurter, Vienna sausage and Harbin Red Sausage. They boast high elasticity, superior slicing properties, compact texture, and far stronger water and fat retention capacity compared with other sausage types.
Processing Principles of Sausage Products

    Fresh sausages: Uncured meat is chopped, seasoned and stuffed into casings; full cooking is required prior to consumption.
    Raw smoked sausages: Cured or uncured meat is chopped, seasoned, stuffed into casings and smoked without cooking.
    Cooked sausages: Cured meat is ground or emulsified, seasoned, stuffed into casings and fully heat-treated.
    Smoked cooked sausages: Stuffed casings are baked, fully cooked then smoked.
    Fermented sausages: Stuffed casings undergo optional smoking, followed by drying and fermentation to remove most moisture.
    Speciality sausages: Special raw materials such as pork rinds, cereals, livers and starch are blended with seasonings to form the final product.
    Mixed-meat sausages: Livestock meat serves as the main ingredient, supplemented with fish, poultry or other animal meats.

1. Comminution
(1) Definition: The process of reducing raw meat particle size through mechanical force.
(2) Functions: Improve product homogeneity and enhance tenderness.
Processing equipment: Meat grinders, emulsifiers, bowl cutters, slicers.
Comminution intensity ranking (from coarsest to finest): slicer > Meat Grinder > bowl cutter > emulsifier.
2. Mixing
Additional stirring performed prior to further processing to dissolve and swell meat proteins. Pre-mixing refers to grinding and blending raw materials several hours before meat batter preparation.
3. Emulsification
(1) Definition: A process where muscle tissue, fat, water and salt undergo high-speed chopping to form oil-in-water emulsified meat batter.
(2) Physicochemical changes for batter formation
① Protein swelling to form a viscous matrix;
② Formation of emulsions composed of soluble proteins, fat globules and water.
Emulsion definition: Mixture of two immiscible liquids.
Type of meat batter emulsion: oil-in-water.
Dispersed phase: fat droplets.
Continuous phase: Water containing soluble proteins and other soluble muscle components, mixed with muscle fibers, connective tissue and fibrous fragments.
Emulsifiers: Meat proteins (sarcoplasmic proteins and solubilized myofibrillar proteins), among which myofibrillar proteins play the dominant role.
(3) Factors affecting batter stability
Matrix formation status, emulsification temperature, fat particle size, pH value, quantity and type of soluble proteins, and batter viscosity.

(1) Purposes: Generate uniform pink color, deliver balanced saltiness, boost water retention and develop characteristic flavor.
(2) Processing conditions: 0–4 °C, 24–72 hours.
3. Grinding
Strict temperature control is required to avoid temperature rise during grinding.
4. Bowl Cutting
Raw material feeding sequence: lean meat → ice → seasonings and spices → fat.
Controlled parameters: Final temperature ≤16 °C for pork and beef, ≤12 °C for chicken; processing duration 6–10 minutes.
5. Stuffing and Casing Tying
Stuffing tightness must be moderate, followed by casing knotting.
Casing types: PVDC casings, nylon casings, cellulose casings, etc.
6. Baking
Purpose: Denature casing proteins to strengthen casing firmness.
7. Smoking and Cooling
(1) Smoking
① Purposes: Endow products with unique smoky flavor, improve color, remove partial moisture, achieve partial sterilization and extend shelf life.
② Processing conditions: 50–80 °C, processing duration ranging from 10 minutes to 24 hours.
(2) Cooling conditions
Cool in cold water at 10–15 °C for 10–20 minutes until ambient temperature, then transfer to cold storage at 0–7 °C.
