1. SmokedCooked Sausages and Hams
The cooking process for smokedcooked sausages and hams is generally performed below 100 °C. High temperatures exert significant adverse effects on product quality. Elevated temperatures can damage and denature protein molecules, impairing the product tissue structure and reducing waterholding capacity. For sausages in natural casings in particular, the casing possesses low mechanical strength and cannot withstand hightemperature conditions. Excessively high temperatures tend to cause product deformation and casing bursting.
Cooking temperatures normally range from 75 °C to 95 °C. For sausages stuffed into natural casings, the cooking temperature is further limited to 7585 °C.
2. Limitations of LowTemperature Cooking and Pasteurization
Lowtemperature treatment kills most vegetative microbial cells, while heatresistant microbial spores remain. Under lowtemperature storage conditions, these spores hardly germinate and grow at an extremely slow rate, which normally will not lead to microbial count exceedance.
Nevertheless, the residual spores represent a potential hazard. Poor temperature control during storage and distribution may trigger massive spore germination and microbial proliferation. This will severely compromise product quality, even resulting in spoilage, endangering consumer health and safety. Product deterioration can also cause substantial direct economic losses to manufacturers.
3. Characteristics of Microbial Spores
Microbial spores share several common properties. Targeted cooking processes can be developed based on these characteristics to reduce spore loads and ensure the safety of smokedcooked sausages and hams.
Bacterial spores remain dormant under unfavorable growth conditions (e.g., low meatbatter temperature). Heat treatment (e.g., holding at 65 °C for dozens of minutes) can accelerate spore activation.
4. Process Optimization Leveraging Spore Properties
In the initial stage of stepwise cooking, hold the product at a constant temperature of 65 °C. This condition inactivates vegetative microbial cells while accelerating spore activation. Owing to thermal lag during heat transfer, every part of the product is maintained at approximately 65 °C for a certain period, promoting spore activation. When the temperature is subsequently raised to 7585 °C for pasteurization, those activated spores will be destroyed.
