I. Selection and Trimming of Raw Meat

Select edible animal lean meat and internal organs that have passed veterinary hygiene inspection as raw materials, with pork fat being the only permissible fat. Remove bones, tendons, muscle membranes, lymphatic vessels, as well as diseased and damaged parts from the lean meat.
II. Low-Temperature Curing

Cut the selected meat into pieces of a specific size according to processing requirements, and then cure them by adding a prepared mixed salt in proportion. The mixed salt primarily consists of salt, with a certain proportion of nitrite, ascorbic acid, or isoascorbic acid added. Typically, salt accounts for 2% - 3% of the weight of the raw meat, nitrite accounts for 0.025% - 0.05%, and ascorbic acid accounts for approximately 0.03% - 0.05%. The curing temperature is generally below 10℃, preferably around 4℃, for a period of 1 - 3 days. The purpose of curing is to adjust the flavor, improve the product's tissue structure, and enhance the color development effect.
III. Mincing or Chopping

The cured meat can be minced using a Meat Grinder or chopped using a chopper. To form the muscle fiber protein into a gel and sol state, evenly distribute the fat within the protein hydration system, and improve the viscosity and elasticity of the meat batter, chopping is usually carried out using a chopper. After chopping, the myofibrillar protein in the raw materials is activated, its structure is altered, surface fat is reduced, resulting in a finished product that is tender, delicate, and extremely easy to digest and absorb, with a significantly increased yield. During chopping, the meat absorbs water and swells, forming elastic meat batter, so ice water needs to be added. The amount of ice water added is 30% - 40% of the weight of the raw materials. The feeding sequence during chopping is: beef → pork (lean first, then fat) → other meats → ice water → seasonings, etc. The chopping time should not be too long, generally 10 - 20 minutes is appropriate. The maximum chopping temperature should not exceed 10℃.
IV. Seasoning and Batter Preparation

After chopping, all the seasonings are usually added to the chopper and stirred until evenly mixed.
V. Stuffing and Filling

Transfer the chopped meat batter into a sausage stuffer for stuffing and filling. The stuffing must be uniform; if it is too loose, air can easily penetrate and cause spoilage, while if it is too tight, the sausage may break during cooking. If not using a vacuum continuous stuffing method, puncture and release air in a timely manner. After stuffing, tie the wet sausages as required and hang them on a baking rack. Rinse off the surface oil stains with clean water, and then send them to a baking room for baking.
VI. Baking

The purpose of baking is to dry the surface of the casing, increase its mechanical strength and stability; turn the color of the meat batter red; and remove the off-flavor of the casing. Bake at a temperature of 65 - 80℃ for about 1 hour, ensuring that the center temperature of the sausage reaches 55 - 65℃. The well-baked sausages should have a dry and smooth surface, no oil flow, a semi-transparent casing, and a rosy meat color.
VII. Cooking

Water cooking is superior to steam cooking. The former results in less quality loss and a wrinkle-free surface, while the latter is more convenient to operate, saves energy, and has a lower breakage rate. For water cooking, first heat the water to 90 - 95℃, then put the baked sausages into the pot and maintain the water temperature at 78 - 80℃ until the center temperature of the meat batter reaches 70 - 72℃. The sensory identification method is to gently squeeze the sausage body with your hand; if it is firm and elastic, and the cut surface of the meat batter is smooth and glossy, it indicates that the sausage is cooked. For steam cooking, stop when the center temperature of the sausage reaches 72 - 75℃. The cooking speed is usually 1 mm/min. For example, if the diameter of the sausage is 70 mm, it needs to be steamed for 70 minutes.
VIII. Smoking

Smoking promotes surface drying and glossiness of the sausage, forming a special smoked color (tea brown); enhances the toughness of the sausage; imparts a unique smoky aroma to the product; and improves its antiseptic ability and storage stability.
IX. Finished Product Quality

A qualified finished product has the following characteristics: the casing is dry and intact, closely bonded to the meat batter, the filling is firm and elastic, the surface has evenly distributed walnut-like wrinkles, the length is consistent, the thickness is uniform, and the cut surface is smooth and glossy.
X. Storage

Unpacked sausages are hung for storage, and the storage time depends on the type and conditions. Wet sausages have a high water content. For example, they can be hung for three days at 8℃ with a relative humidity of 75% - 78%, but only for one day at 20℃. Sausages with a water content of no more than 30% can be hung and stored for 25 - 30 days at a temperature of 12℃ and a relative humidity of 72%.
